Summer events: making pizza RCP style at home

Summer is the best season to enjoy the beauty of RCP London Events’ medicinal garden, which contains over 1,000 plants with links to medicine. This wonderful tranquil space adjacent to Regents’ Park is the ideal location for creative summer events, receptions and al fresco dining. 

Throughout the season, the garden is decorated with a stretch tent with fairy lights, rugs and benches to add a creative element.
Entertainment, lighting and additional decorations are also available to create a memorable experience that will ignite all senses.

As part of our summer catering offer, we have created a fun pizza party package that allows guests to watch pizza being prepared and cooked in our garden in a wood-burning pizza oven. The eco-friendly fire logs we use have been transformed with the 3,500 kg of waste coffee grounds produced from the venue each year.

As the summer season approaches, we met with Salvatore Cirillo, Junior Sous Chef and pizza chef at RCP London Events, to find out more about his career journey and his secret pizza recipe.

Salvatore has been a chef at RCP London Events for four years, but his career as a pizza chef has spanned more than 10 years. 

“I went to a catering/hotel management school and started to work in a restaurant in Caserta (near Naples) when I was 15,” he said. 

“Pizza is my passion. When I was a kid working in a restaurant as a dishwasher and then cook assistant, I used to watch the pizza chef making pizzas and started teaching myself how to make basic recipes. Little by little I found out the tricks of the trade and learnt how to make a good Neapolitan pizza.”

Most important thing to look for when making pizza?

“The quality of ingredients is crucial: make sure you have good ingredients to start with. And temperature! If you have a pizza oven at home, make sure you check temperatures regularly and that the oven is hot enough.”

What is your favourite pizza?

“My favourite pizza is Siciliana pizza: tomato base, mozzarella, fried aubergines, parmesan cheese and basil.

In our new Pizza Party Package we call it Parmigiana – I made sure it was included in our pizza menu at RCP London Events because it’s really good and everyone should try it!”

Fancy a pizza but your summer event at RCP London Events is too far away? We’ve got you covered. Salvatore shares his recipe for you to replicate our delicious pizza from the comfort of your kitchen.

Recipe and method:

Ingredients

500g pizza flour (or 00 flour)
1,5g dried yeast
25g salt 
300ml water

Method

Mix the flour and yeast in a bowl, and add 490ml of water. 

Keep mixing until the ingredients come together and start resembling a dough, then add salt and knead for a further 3 minutes. Add the rest of the water slowly until it is all combined.

Place the dough in a container and cover it with an air-tight lid. Leave it out at room temperature for 1 hour, then refrigerate for 20 hours at 4°C. After 20 hours, remove the dough from the fridge and shape it into 250g balls.

Leave at room temperature for 2-3 hours before using it to make your pizza base.  

Proceed with creating your tomato base and prepare your toppings. At RCP London Events, we mix fresh tomato sauce with salt and extra virgin olive oil to create a delicious base.

Spread your tomato sauce on the pizza base. Top with mozzarella and any other toppings of your choice, whether that be mushrooms, pepperoni or grilled vegetables. Alternatively, keep it simple and only garnish with some fresh basil leaves and oil to enjoy an amazingly authentic Margherita.

Bake in your oven at 250°C for 4 or 5 minutes. Cut into slices, serve hot and enjoy!
